Double Decocted version of Pivo Pilsner hopped with Perle, Saphir, and Lorien. A Collaboration with Firestone Walker Brewing Co.
Yet another dream collaboration. This one is with one of our beeroes (We're pretty sure that's a word) and a brewery that's at the forefront of the craft beer industry. Firestone Walker brews universally loved beer, but our #1 has always been their Pivo Pilsner. We decided to take their recipe and put a Humble Sea spin on it, which includes a sophisticated mash regime with two decoctions and multiple temperature rests for a thorough sugar extraction meant to produce subtle malt nuances as well as increased head retention. We also used Lorein instead of Saphir on the small dry hop for a little added twist.

Can poured into a Firestone Walker Brewing Co pint glass
A: Pours crystal clear golden straw with a frothy eggshell white head that settles to a light layer and leaves a little nice lacing.
S: Grassy, floral, herbal, citrus zest, slightly resinous, hints of stone fruit, faintly toasty crackery malt, and a touch of honey sweetness.
T: Resinous, floral, citrus zest, lemon and orange, fairly grassy, underlying herbal notes, hints of stone fruit, faintly toasty crackery malt, and a touch of honey sweetness.
M: Medium body, moderate carbonation, pretty smooth.
O: Another really well done collab taking on a classic craft Pils. Pivo was never my favorite, but HS did a great job putting their own touches on it. Hits all the original notes, but adds a little extra smoothness.

Sweet and light bready malts and lemony hoppy nose on this one! Taste follows with a clean and crisp and balanced, honey malty and lemon citrus hoppy bitter finish. I have never had the pleasure of having the well-esteemed Pivo Pils, but, if this is a tribute to it, I can't wait to try that one as well. Really good!
