Humble Sea Brewing Co.

This stout takes its name from Bottle Logic’s legendary vanilla stout, Fundamental Observation. We brewed the majority of the base beer for this collab during the pandemic and tucked it away into vanilla bourbon barrels for 19 months. After tasting through them at 19 months, we decided to treat them to another stay in rye for an additional 13 to pick up some spicy notes. We also added a handful of Mexican vanilla for this second round of aging to even further the vanilla character. After 32 months, we racked both of the barrels, along with an additional double bourbon barrel-aged stout that did not contain vanilla beans to produce this luscious 15.2% vanilla stout.
