Wine Barrel Aged Table Beer featuring Blueberry and Mosaic.
First, we used wine barrels from Beauregard Vineyards with 12 months conditioning time. We allowed the blueberries to condition for 6 months in stainless steel to lock in the aromatics and fully ferment out the sugar for an extraaa dry body. Blueberry is a big part of our hand selected mosaic’s undertones so it was an obvious choice using mosaic! Our House Alchemist James reeeally wanted to have as delicate of a hop presence as possible so he went with the double dry hop he could nail the hop rates (you can always add more, but you can’t take any out!)
