Oak-aged Grisette
For Husk we started with a unique heirloom, six-row barley variety called “Olli”. Often overlooked in favor of two-row barley, the rustic qualities of six-row provide a unique environment for our house mixed-culture to work. Discontinued nearly fifty years ago in favor of modern barley varieties, "Olli" has been continually grown by just a single, small family farm in Northern Alberta - and as of recently, malted by Canada Malting Co.. Complemented by the addition of locally grown wheat and gently hopped with Czech Saaz, we once again aged Husk over several months in one of our oak foeders. The aging process brought an additional layer of complexity and gentle citrus acidity with a bit of minerality/salinity to a beer truly meant to refresh.

This is a nice looking beer that's light orange in color with plenty of light shining through giving it a very bright appearance. It had plenty of carbonation in the bottle (would have overflown if I had waited any longer to pour it), but the head in the glass was fizzy and short-lived.
Aroma has a really nice musty funk with hints of lemongrass and freshly mown hay.
Taste is similar to the nose. Light funk, slight hints of citrus, and just a bit of oak barrel. This is very light, easy drinking and refreshing.
Overall, very tasty.

Big thanks to my friend MrDarcy for grabbing me this bottle.
The beer poured a nearly crystal clear, pale golden yellow color and was topped by an inch-tall, fluffy, bright white crown that quickly that quickly dropped to a thin collar. A few odd shaped streaks of lacing clung to the sides of the glass. On the second pour, some of the yeast in the bottle sneaked into the glass and made the liquid appear slightly hazy.
The aroma was really crisp and dry. Powdery yeasty notes came through big time. Good amount of tart lemon and wheatiness too. Oaky tannins were also apparent. This had a bit of a buttery Chardonnay-like quality to it as well. The tart lemon and wheaty notes really intensified as the beer warmed.
The flavor profile was similar to the nose but more acidic and simplistic. Super crisp and bright from start to finish. Big tart lemon presence up front. Lots of wheaty character too. Grainy malt notes were also apparent. Dry oaky tannins came forth as the beer moved along the palate. The beer finished with more lemony tartness and some lingering tannins.
The mouthfeel was somewhat disappointing. It was medium bodied for the style but seemed to be lacking in carbonation. Soft on the palate. I was definitely anticipating this to be more crisp and fluffy however.
Husk is an enjoyable beer, but it would have been significantly better with more carbonation (and a lighter, fluffier mouthfeel). All in all, given the large format and the price point, I was expecting this to be a bit more exciting.

A: The beer is a light straw color with a light haze. A vigorous pour yields a fine white 2 finger head that dies almost immediately leaving a minimal ring of bubbles around the glass which in turn leaves a light spotty lacing. When I look closely I can see a plethora of carbonation streamers rising in the glass.
S: I smell white grapes, orange peel, lemon, notes of oak, a hind of funk
T: I get vinous white grapes to start followed by huge sour lemon and light bitter orange peel. I also get a nice taste of grainy malt on the mid rear palate. The orange flows into the back end of the palate where it is highlighted by oak and notes of funk.
F: The body is light and lively with a medium carbonation that prickles the roof of the mouth. There is a light dryness on the finish. This beer keeps you coming back for another drink; an excellent mouthfeel.
O: Another farmhouse from Fox Farm and another homerun. They are doing god's work. This beer is very well balanced with no element overpowering the others. It's got everything one could want in a farmhouse beer. Fruity, sour, funky nose; with a taste that has complexity but doesn't hit you over the head with either the hops, malt bill, or acidity; and a mouthfeel that ties it all together.
