With Pebble we seek to express a different side to our mixed culture - one often overshadowed in flavors of more bold, acid-producing components. Expressive Saison yeast drives a nuanced complexity while a gentle Amarillo dry hop lends a bit of brightness and life. Naturally carbonated in the bottle and presented in the spirit (of) subtlety and refreshment.

Pours a cloudy yellow straw color with an effervescent white head. Decent retention.

Lots of lime and apricot on the nose. Some pear and lemon zest as well. There's a bit of grassiness with just a hint of funk.

The flavor is nicely tart with plenty of spicy hops to balance things out. Lemon and lime zest, pears, peaches, and cereal grains with some notes of cracked peppercorn and grass.

Feel is light bodied with lively carbonation. Crisp and dry.

Overall, this is a great, sessionable saison that doesn't sacrifice flavor for drinkability.

Batch 2 from June, 2020.

This is a good looking beer. Very light, straw color with excellent clarity and loads of persistent white head that is consistently replenished by the noticeable carbonation. Aroma is lemongrass and freshly mown grass. Overall, the look and smell of this are very, very inviting.

Taste is more lemongrass, and is very light and refreshing. It's not overly complex, nor does it try to be. The saison yeast is working it's charm perfectly here. Well carbonated, and extremely refreshing. At 4% I could drink this all day.

Sometimes after a long day at work you just want a simple, low abv, mixed culture Saison. And today Fox Farm has me covered on that front. I’ve been impressed with my haul from them so far, and I’m sure this one will be no different. Let’s dive right in

Pours a hazy pale yellow with a finger of soapy white head that slowly fades to a thin cap and leaves minimal lacing

The nose is super punchy and tart with a great balance between clean and funky notes. I’m picking up on aromas of lime zest, crackery malt, petrichor, tannic white wine, earthy hops, white pepper, wildflower honey, toasted grain, and lemon juice

While it doesn’t quite keep up in taste, this is still great for what it is. On the front end of the sip I’m tasting bready malt, lime zest, earthy wheat, white grape, grassy hops, white pepper, light lemon juice, and stone. The swallow brings notes of stone, crackery malt, wildflower honey, white grape, straw, grassy hops, lime zest, and white pepper

A light body pairs with gentle tingling carbonation, resulting in a crisp beer. Finishes bone dry and refreshing

Man, I could drink this by the case. Once again, I wish I picked up more than just 2 cans of this one

Can from the brewery in Salem, CT. Pours a slight cloudy straw gold with a finger of bubbly head that dissipates, minimal lacing; smell is sweet doughy brioche, sour lemon honey candy, lemon balm, mild funky zesty hops; taste is tart apple flesh, green grape flesh, grape skins, floral lemon, hint of lemon zest; feel is light, bright acidity, dry finish, medium acidity. Tart crispy funky treat.

Batch 3 bottled Jul. 21. 750ml bottle served in my Spiegelau tulip. Pours a pale yellow with a translucent clarity and a fizzy, quarter-inch, bright white head. Nose expresses spritzy citrus notes, medicinal/herbal notes and a hint of horse blanket. Taste follows nose. Mouthfeel is light in body with an assertive acidity and a prickly carbonation. Overall, really quite delightful and drinkable for the abv.

Pours a pale straw with a soapy fairly quickly dissipating white head. Lemon, lemon verbena, and hay. It is certainly lemony up front with some aloe vera. A touch of floral bitterness provides an underpinning. It's dry but there is a good deal of acidity. Not nearly into the enamel busting AWA territory of the mid-teens but certainly enough to detract from this being a super sipper. All the same, it's a good table beer, a style we need to see more of.

Pours slightly hazy, straw yellow in color with one inch head. Taste is straw, funk and sour mix. Light bodied, funky, with high carbonation. Makes for a nice and clean, easy to drink beer. Would get this again.

L: The first pours a pale gold color with high clarity; no haze here. A regular pour results in a two finger fine white head that quickly recedes to a 1mm ring around the perimeter of the glass that is retained for the remainder of the glass. The second pour (and all thereafter) also results in a pale gold color with a two finger head, but this time the beer has a medium-light haze. As the beer is emptied a minimal spotty lacing is left on the glass.

S: On the nose I get cut grass, barnyard funk, Belgian bubblegum, earth, orange rind, lemon, ginger notes, white grape notes, and just the slightest hint of white tea exhibiting jasmine and apricot features.

T: On the front of the palate I get orange pith and white grape notes. This leads into a grassy barnyard funk that quickly begins to trend lemony sour. The back end is dominated by sour lemon, with hints of light lemongrass and white tea notes, and light ginger notes. The sourness while quite strong is balanced by the floral tea notes and not overpowering.

F: The beer has a light body with medium-light carbonation (on the lighter side). It's acidity is balanced by the drying finish. This is a thirst quenching beer that keeps you coming back for more.

O: At 4% abv (that's what batch 2 bottles say) in a 750 ml bottle I could go for a couple of these in one sitting and still be itching for more. Also, for such a low abv this beer has tons of character. Probably one of the better CT farmhouse ales that I have sampled thus far. Will definitely be picking up more bottles of this world class farmhouse.
