cool idea for a beer, to pair mosaic with noble hops, makes great sense, especially for me, since i like a little spicy old world bitterness on the back of my hazy ipa. its interesting that its become novel for these types of beers to be cool or cold fermented, like with the rise of cold ipa as a wannabe style, its become a thing to say on a label, but like, all ipa should be cool fermented, save maybe the belgian types, east or west coast type doesnt matter, for me, less yeast character in the ipa style is generally better. this beer is great, shows impeccable attention to detail, and the noble hops bring out a cool side of mosaic, which i found to be almost sweet, sort of candied in the flavor here, very interesting, suggests cryo hops or some concentrate of some kind to me, but i dont think the can claims that. not overly hazy, unfiltered looking to me, nice high rising and lasting white head. nose of pineapple candy, sweetened coconut, and earthy dry cereal malts, maybe a little weed thing going on, perhaps some lemongrass and green tea notes too, floral and springy, but sweet, and seemingly not from grain. the flavor is the same, an almost honey or resin-like property to the mosaic, the grassy german hops behind that, both doing their thing, the synergy is awesome and freshness here is radiant, this tastes brand new, unblemished, its technically exceptional. great carbonation, really clean ferment, and not just haze and body from the grain but some super compatible flavor as well, this is balanced almost like a pale, timeless to me. these guys are killing it, stoked to drink the others in my fridge this weekend. big thanks to my brother for the surprise hookup!
