In our special pie factory all lovely desserts are being made. This pastry sour is based on one of our brewers favorite pies; Strawberry meringue! With a twist of white chocolate and cocnut for a nice tropical and sweet twist.

Pours a deep golden amber coloration with a medium, fluffy head. Smell is dominated by strawberry, with hints of coconut and lactic acid also coming through. Taste is a good balance of a distinct sweet strawberry presence and soft hints of coconut and chocolate, with a soft underlying lactic acidity as well. Finishes with a light tartness and some strawberry and lighter coconut lingering in the aftertaste. Smooth mouthfeel with a medium body and carbonation. I usually stay away from anything labeled "pastry", but sometimes I feel adventurous and this really wasn't too bad, not being overly sweet, with a good acidity. The strawberry is definitely the dominant ingredient here, with the white chocolate being noticeable as a certain, sweet chocolate presence and the coconut hardly coming through at all, to be honest. While this doesn't seem quite rich and sweet enough for the style, that doesn't bother me at all personally. It's also exactly one year old right now, by some odd coincidence, and I'm not sure how this affects this kind of beer. Not too much, probably, but who knows.
