750ml bottle
Pours about a finger of white head into my tulip glass. Head quickly starts to fizz away. The body is bright orange in color, and has a large amount of bubbles coming up. Visibility is very high. Not super impressed with that head, we'll see how things progress.
Nose is solid. Honey, yeast, banana, clove. Pretty estery. Pretty flowery. Not picking up any of the dry hopped portion. Solid nose, clean, smells yummy. Somewhat generic, but that's ok.
The first thing I notice on the flavor is how dry it is. You get a little honey, and an unorthodox light, dry sweetness. Faint Belgian yeast characters in the background. Not really much in the way of hop presence. A little lemon, there are hints of sourness here. They likely used a champagne yeast blended with a Belgian yeast. I mean, this is different, but I can't say that's a good thing - the flavors are just very faint. Just way too light for me, it's ok.
The mouthfeel is good. I don't mind how dry it is at all, it just needs more flavor. The carbonation is above medium, and the body is pretty light. Could use a slightly bigger body, but that's obviously not what they were going for here. Overall a pretty decent mouthfeel.
The drinkability is super high, in fact, I think that was their main goal here, and that's kinda what went wrong.
The appearance turned out ok. The head was not good. The lacing however wasn't terrible, not great, but not terrible.
Overall there just isn't enough flavor here, pretty simple. I will revisit this once I'm at the bottom of the bottle and I can get all the yeast out, but for now - too little flavor.

as much as i loved this beer, i also had higher hopes for it, if thats even fair to say about something as good and drinkable as this is. i love honey in this kind of thing, and i have had some epic wild type beers from these guys, so i was looking for more funk (this is super clean), and more honey, it tastes mostly fermented out, and despite a really light floral sweetness to it, it isnt there so much. that said, as a belgian pale or clean saison type, this is really well done. crystal clear as can be, with a tall and rising white head on it, lots of bubbles coming up, and an amazing visual refinement level, sexy as can be. the nose has a little bit of a belgian ester to it, also a french saison yeast vinous component, some white grape, peach, and honey when i make myself believe it. some hops too surprisingly. the flavor is about the same, lots of yeast to it for how clean it is, but no funkiness at all, i want some wild here, and dream about this with some brett. the floral element is still there, a saaz hop type thing, and a touch of tartness for just a second, minerals and carbonation are all thats left on the swallow. really well refined beer, artfully done, but not quite what i was expecting out of it, especially in the context of the rest of their lineup. delicious and drinkable though, worth the reasonable asking price...

750 ml bottle. Pours slightly hazy straw gold with a huge fizzy bubbly white head that retains well and leaves a little lacing.
The aroma is sweet fruity floral honey malt with some leafy hops.
The flavor is sweet soft fruit and honey with some doughy malt and a yeasty bitter, slightly bandaid finish. The mouthfeel is medium bodied with low carbonation.
Overall, a decent saison.

Poured into a Gavroche tulip. Pours a medium golden amber with a patchy white head that slowly dissipates leaving slight lacing. Aroma of grainy malt, saison yeast and a little mineral; classic, if mild saison profile. Flavor is grainy malt with a little husk, saison yeast, a hint of lemon and honey; finishes dry and very much like a dry mead. Medium bodied with light creaminess and peppery carbonation. This is one of the best hybrids between a saison and mead I've had. Most are saisons with a little honey flavor, but this has has both a classic saison body and a finish that is what I've enjoyed in in dry meads. There is just a little honey flavor at the end in the finish. Drier than I expected, but true to both styles. Well done and interesting.
