Although we're probably best known for our Rhino Suit series of imperial milk stouts, with this beer we aimed to strike a balance of boldness and dark chocolate richness, without the added sweetness of lactose, allowing the base malts to shine. Maturation in Henry McKenna 10-year bourbon barrels infuses the beer with delightful bourbon nuances and a silky veil of vanilla to balance the robust roast character of the underlying malts.
If you love dark chocolate, black coffee, and big stouts, Oak & Ember just might become a new favorite with its harmonious blend of deep roast, bold chocolate and bourbon-kissed warmth.

Appearance: Pours espresso colored with a tan haze that fades to a collar; leggy with speckles
Smell: The oak is most prominent in the aroma with smoke and Bourbon joining the dark chocolate tone along with a hint of vanilla
Taste: Oaky and somewhat smoky, up front, with the Bourbon building; dark chocolate and vanilla tones emerge; nicely blended into the finish
Mouthfeel: Full bodied with low to moderate carbonation; warmth in the gullet
Overall: Really enjoying the oak and the smoke; well-named

500 ml bottle into a snifter. A 2024 release, had 8/10/24.
Pours an opaque dark brown, with a half inch foamy head and some foamy lacing. Aromas of bourbon, oak, malt, some char, light vanilla. Largely the same flavors: bourbon, malt, oak, some vanilla and chocolate, light char. Smooth, a very good fuller body, well carbonated.
Tasty barrels, lots of oak. The aroma is excellent and it has a very good flavor that’s a little bit more delicate. Very enjoyable.

Poured into a Fremont small snifter. Pours a very dark mahogany brown, appearing opaque in the glass with a one finger dark khaki head with great retention and slippery solid lacing. Aroma of dark toasted malt, bourbon, bakers chocolate, woody oak and oaky vanilla. Flavor follows with dark toasted malt with light char, bourbon, oaky vanilla and bakers chocolate; bourbon chocolate truffle finish. Medium bodied with moderate creaminess; silky mouth feel. Lived up to its name, at least the fine oaky barrel character. The Ember / malt char is somewhat subdued, but noticeable (I would have liked a bit more ember char, tbh). A solid non-adjunct stout with a well balanced bourbon barrel profile. The ABV is dangerously well covered. This is an excellent barreled stout and a credit to Alesong's barrel program. Nicely done.
