Secrets of the Staghorn Sumac Saison is a brewer's collaboration from the funk side, where the production team came together to put together the recipe. "Staghorn" is the kind of sumac that it is used in the recipe.

Almost clear, straw gold (SRM 3-5). The head is off white and foamy, holding one inch for a few minutes before leaving a thin coating of lace on a Strangebird IIPA glass. A light haze develops with warmth.
The aroma opens with lemon and musty funk. Warmth brings out strong basil and light rosemary.
The flavor is sharply bitter on entry, and is quickly subdued by a modest tart-sourness. Lime is more noticeable than the anticipated lemon. Juniper is faintly in the background. The finish is long and gripping, stripping away any hint of sweetness, making the beer quite dry. Warmth brings out basil and perhaps only a suggestion of rosemary.
It has a medium body and a texture of wet cardboard. Carbonation is faint, and the alcohol is well below expectations.
According to the label, this beer uses sumac, for which I have no reference to discern. Regardless, it is a mild Saison and was the first beer I enjoyed outside this year. The warm, overcast afternoon was all the more enjoyable for this beer thanks to Dave.
