Beginning from Tapachi, the traditional Mexican fermented pineapple drink, we brewed this with hickory king corn, then conditioned on pineapples, grains of paradise, and Indian long pepper. A final rest on Saigon cinnamon makes a juicy, spicy refresher for hot weather.

On tap at brewery into plastic cup. Pours lightly hazy pale golden yellow color with a small white head with good retention and spotty lacing. Aromas and flavors of lightly funky pineapple, corn, grain, peppercorn, cinnamon, coriander, grain of paradise, herbal, floral, grass, yeast earthiness. Light herbal bitterness and fruit tart finish. Crisp clean refreshing lager finish. Medium-high carbonation and light body. Balanced grainy malt and sticky hop mouthfeel. No astringency. Very unique. No off flavors. This was great and interesting for an experimental adjunct lager.
