A blend of 2 barrels, selected for their strong grapefruit-like flavours. The predominantly bitter and sour pallatte complements the basil addition. The fresh basil was cold infused through transfer from barrel to conditioning tank, allowing the beer to pick up on the delicate, shallow aromas of the herb. A lower acidity paired with the vibrant profiles of basil and grapefruit make for a refreshing and unique beer.

Pours a slightly cloudy, golden amber coloration with a tiny, fizzy head. Smells of doughy, biscuity malt, with some citrus aromas and just a hint of basil and musty oak. Taste is a good balance of doughy, biscuity malt, citrus hops, some estery fruit, with hints of grapefruit, green apple and apricot, and very subtle basil and musty oak accents coming through as well, as well as a mild underlying lactic/citric acidity. Finishes with a light tartness and some citrus/estery fruit and the merest hint of basil lingering in the aftertaste. Smooth mouthfeel with a mewdium body and carbonation.
While I do think that this makes for an interesting brew, it's not quite what I expected from a Saison infused with basil. First off, the basil is VERY subtle here and there's also a certain grapefruit character to this that goes beyond the rather mild present lactic/citric acidity and feels somewhat hoppy, actually, reminding me a little of those dry-hopped Saisons that I've had before. While I'm sure that it's easy to overdo the basil here, this still feels a bit too citrussy and not quite herbal and estery enough for my personal taste, although this still makes for an enjoyable and refreshing beer overall, that is perhaps better suited for the warmer seasons though.
