A-Pours a very clear golden color with a slight head and lacing
A-Aroma has lemongrass and slight oak hints
T-The taste follows the nose with a nice lemongrass and slight oak flavor and a very pleasant tartness
M-A light bodied very well carbonated and nicely balanced beer
O-A very well done Belgian Saison

Smell is minerals, hay, wheat and oaked lemon, but very light on the aromas. Taste is bright version of the aromas, add in some grass and big helping of belgian yeast, but as the beer warms up a metallic aftertaste starts to develop. Body is very thin as well.

Hazy pale yellow, brassy tone with occasional rising bubbles. Initial fizzy burst of white foam that audibly crackles and dwindles to nothing.

Aroma is a little skunky due to the green bottle, maybe an intentional Fantome hommage. Minerally, soft oak, minimal wet hay funk, vague sweetness.

Tart lemon curd, oaky vanilla, Belgian yeast esters. Light pepper in the aftertaste from the saison yeast. As it warms, there’s a fleeting touch of brie rind and fruit. Light bodied, the carbonation seems to ebb away unfortunately, a little watery as a result. Tastes good though not especially complex or funky, fairly restrained overall.

It’s not fully spontaneous or a lambic at all, simply because it’s tart and oak aged. A wild saison in the vein of Off Color, Hill Farmstead, and Fantome, not unlike Basque sidra either.

this is world class, as old worldy, rustic, and lambic-esque as i have seen from these guys, definitely some of their best and most mature beer, but its also really subtle in the right ways and drinkable, it wasnt cheap, but it is well worth the asking price! aged 18 months in oak, it has a decidedly white winey aroma, chardonnay brightness and acidity, some fruity mature brett funky too, wheaty and turbid mashed i would think, even an aged hop complexion in the aroma, with subtle tea-like herbaceousness and no bitter. the flavor is awesome, the wood really well incorporated and quite robust. a simple and earthy grain soup at the base, not heavy at all, a little starchy though, but delicate and round and right for the yeasts, which really lead the way. more than just lacto, but a definite bacterial tang, lemony and the right kind of lingering, supporting but not exceeding the dynamic brett in here, barnyardy and rustic, with some of the microbial depth of good lambic, a really drinkable and compelling wild saison. high energy carbonation is wonderful in this type of thing, it pops this off magically, and the sourness helps dry it in the finish. as good a beer as i have had from these guys, temped to pick up another and see how she ages...

22oz bottle. Poured out a slightly hazy, straw yellow color with a small, white head of foam. It smelled of caramel, tart lemon and white grapes. Tart but not overly sour with lemon and a yeasty bite.

Pours a foggy pale-yellow with half a finger of fizzy white bubbles that disappear rather rapidly. Aroma is lightly sour brett, with peach, lemongrass, herbal hops, and oak. Flavor profile is peach, lemongrass, pear, green apple, herbal hops, biscuit malts and light sour brett. It has a nice twinge of sour and tang from the fruit. Mouth feel is thin with a medium-thin consistency. Overall, light fruits within a lightly sour package. Well constructed.

Served in a 12oz snifter from a 750mL bottle.
