This one pours a light orange-ish color, with a small head, and a little bit of lacing.
Given that this is Jester King's cultured fermented at Prairie, it makes sense that this feels structurally more like a Jester King beer than an American Solera beer. There's some oak, melon, spicy funk, white wine, and cirus.
This is really pleasant stuff. It's not quite as bold and "weird' as actual lambic and gueuze, as it doesn't have that heavy duty barnyard thing going. There is some lemon peel and spicy herbal funk, along with oak, champagne, and a touch of citrusy sweetness.
This is light bodied, crisp, and surprisingly clean for the style.
This project is a really intriguing concept, and most importantly, the beer itself is tasty stuff.
