Brewed with loaves of Levain from Patisserie 46, Pilsner malt, honey, oolong tea and fermented entirely with sourdough starter, resulting in a pleasantly tart and crisp kvass. Bottle and keg-conditioned with Champagne yeast to enhance its lively and light character.

A $2 pint from the brewery roped me into trying it. It tasted like a bit of history - something my great-great grandparents would have home-brewed after making too much bread on a weekend or something like that.

I remember the brew had a very pale color, lightly-colored straw and had a sourish salty taste and a smell of stale rye bread. It seems based on what a Kvass is supposed to be this one was to style and was very interesting!

I don't think this style of beer is all that popular (thus the $2 price point lol) and I doubt I'll see it crop up again but I was glad to be able to try is rare style and would try again if it presents itself in the future.

Poured from 750ml bottle into glass.
Almost clear, pale straw colored body. Each pour brings on a brief existence of a white, fizzy head which disappears, and leaves behind a few surface spots of foam and an extremely thin ring fed continuously by rising bubbles. No lacing.
Aroma of bread, tea, honey, and pilsner malt.
Taste of pilsner malt, bread, tea, and honey. No hops and no bitterness.
Medium mouth feel with high effervescence. A little dry in the finish.
Well balanced kvass, with the flavors of a beer fermented with bread, tea, and honey. This means a slightly sweet flavor added to the flat bread and organic tea flavors. This is an example of a fermented beverage brewed with non-traditional ingredients. My initial impression is inclusion of rye, but rather the taste is more sour, such as from sourdough. Each pour is a real presentation with the pale color and the quick development of a fizzy head that then disappears. Enjoyable. Alcohol is not perceptible.

Appearance: Extremely pale yellow, lively carbonation, not much head.

Smell: Dry, lemon zest, reminds me of some lighter Belgian witbiers.

Taste: Dry, lemon, very fizzy feel, some mild earthiness.

Overall: Picked up a bottle since it was $2. I had a kvass in Poland 5 years ago, that one was very much rye bread focused. This one reminded me a little of a witbier mixed with seltzer, very lemony and dry. I think this would definitely serve its historical purpose of being a refreshing drink for warm weather without much alcohol.

Pours a clear light yellow color with a thin white head. smell and taste was light lemon with some herbal and fruit taste,almost no hops. Mouth feel was slight salt and lemon with a herbal finish. First time having a Kvass, and was not a fan, tasted like a stale Berliner.
