First Cut is our initial release using an old European process of blending fresh, young beer with aged, more mature beer. The tradition of blending in this manner can be traced back to numerous brewing regions in Europe including England, Ireland, France, Belgium and even Bavaria. As such, any "Bière de Coupage" could be of a variety of styles of beer and flavor profiles, and the name indicates more about the process of making the beer than the flavor of the blended beer.
For our first blend of this manner we made a young, open fermented, saison hopped with Saaz and Halletau Blanc and blended it with mature foeder aged saison that was showing more acidity and wild yeast expression. We then dry-hopped the blend with 2 lbs/BBL of Hallertau Blanc. The resulting beer is dry and has fruit flavors of white grape and pear with a slight minerality on the finish.

Very heavily carbonated. Huge head. Pours a light golden color, that is murky and hazy. The head retention is excellent, and there some nice lacing as the head dissipates.
The nose is wild and funky. A brut, floral aroma is on the nose. Slightly sour smelling.
Taste - Very light actually. A lot less than I was expecting. It does have a bit of funk in the flavor. A bit floral. A bit sour, but all these seemed slightly muted.
It's heavly carbonated, and the carbonation tingles my throat.
Interesting beer, but it seems to be a shadow of what it should be.

A: The beer is slightly hazy yellow in color and has a light amount of visible carbonation. It poured with a quarter finger high white head that left a collar around the edge and a small patch of bubbles on the surface.
S: Light to moderate aromas of funk are present in the nose.
T: The taste is a little funky, but not nearly as much you would expect based on the smell. There are also notes of spelt-like grains.
M: It feels light-bodied on the palate with a moderate amount of carbonation.
O: This beer has an interesting contrast with the aromas of funk and spelt-like flavors.
