Forgotten Barrel Society Barrel No.1, is a barrel-fermented, barrel-aged saison that waited in that first barrel we filled for more than a year and a half. It is the first barrel we ever filled prior to opening doors to the public for the first time.
Finally ready, this once-simple saison has a tantalizing nose of apricot, fresh-cut oak, and citrus and tastes even better with notes of red wine, apricot, light vanilla, and rustic funk. The Minnesota oak barrel from Kelvin Cooperage (a Tennessee distillery) provides a hint of oaky flavor to round out perhaps our most complex beer so far. Barrel No.1 is a well-balanced, tart saison that grew from its humble roots to become something truly special.

750ml bottle.
Opaque, pale gold colored body. Very brief fizzy head, but the bottle did gush a bit upon de-capping. No lacing.
Aroma of lemon citrus, funky yeast, and oak barrel.
Taste is lemon sour, with barnyard funk and a vanilla smoothness from the oak barrel. Other fruit flavors involved are apricot and cherry. Quite dry at the end.
Medium mouth feel. Very good carbonation.
More sour than a lot of saisons, but has a real base of the grassy and barnyard funk that is a reminder of summer lunches at the farm. Quite layered and nuanced with flavors. Only a barrel aging process can yield the depth and blending of flavors.
