This saison is a blend of foeder-aged and open-fermented beer that was then dry-hopped with Wakatu hops to create an absurdly quaffable and refreshing saison. The hops bring notes of citrus and spice to complement our house saison yeast while the foeder-aged beer provides stone fruit character and a touch of funk and acidity to the base.

From a 750ml bottle into a 20 oz tulip glass.

A bit of a gusher when opened... over a sink (or large chalice ) is advised. It doesn't spray out all over, but it continuously oozed out once the cork is released, like lava out of Kilauea.

A slow and patient pour is required. Repeated pours, waiting for the head to settle in between, are necessary to get even a half glass of actual liquid. In between pours, the foam continues to ooze out of the top of the bottle. It pours with a huge white and airy head that recedes reasonably quickly (which is good, or you'd never be able to drink anything but head!) leaving light and airy lacing down the side of the glass. Hazy very pale yellow color, which darkens a bit on the final pour from the bottle from the residual yeast.

Aroma is a bit subtle, lightly funky, fruity. Spice and citrus.

Taste is funky, tart (bordering on sour initially, but settles into a pleasant tartness). Behind the tartness is an almost peachy fruitiness and slight spiciness. The wood asserts near the finish. The tingling on the tongue and tart flavor remains into the finish and aftertaste. Refreshingly tart and dry.

Feel is light, tingly (like a sparkling wine), and crisp.

Overall, a refreshing, tart beer with a crisp, dry and fruity finish.
