really cool beer, really cool place. this is a sneaky strong bock, paler than expected at this abv, dry for being malt driven, only subtly german in terms of grain and yeast character, and really clean overall, quite professional on the execution, and its a cool recipe, simple in some ways, like strong maibock with the brassy color and the relative lack of sweetness, good mineral profile and overall water chemistry is evident here too, this is pretty polished. slight nuttiness up front, a dry cereal thing in the middle, just a flash of honey or maple, but then more bready with the lager yeast on the back and and approaching dry with a delicate but obvious herbal hop profile, faint spiciness there, noble i assume, but really not adding much bitterness, a nice touch adding a little needed nuance. this is both hearty and light to me at the same time, like its clean and tidy on the ferment and well carbonated, without much alcohol presence, and fast finishing so light, but then also malty throughout, fuller on the palate and in the belly, and satisfying in a neat way, so heavier. good flow to this, nice patient lagering evident, one of those less can be more kind of recipes that shows some real chops in the brew house. nicely done!
