a very tasty amber strong saison, funky and oak fermented, really pretty cool, like a wild biere de garde or something, its malty and sturdy on the grain side of things, with the potential to be sweet eliminated by a more mature brettiness than a lot of their others have. i get some caramelized richness in the grain too, a cereal heartiness and a peppery vibe when the yeast comes in, oak but no wine or anything, just the wood itself, a little sweet and well grounded, a nice touch i think, especially with the brett. subtle anise, black tea, and dark chex cereal notes to this, floral and lighter in taste than it is in feel, no trace of its alcohol strength even with the body, and the carbonation is nice and high, this doesnt stagnate at all. maltier wild beers are awesome, i wish more breweries would use things other than white wheat and pils malt when making the, and i really appreciate this one from cellar west. awesome brewery here, definitely worth checking out, some of the cooler brett beers around right now...
