done in collaboration with wild woods, this is a pretty cool beer, a german pils thats also woody and funky, the best of both worlds, a wild bretty saison meets a clean mature european lager, very nice concept and execution. my pour from the tap was near the bottom of the keg, so i cant be too critical here, but the brett profile is weird to me, not as evolved and interesting as so many of the cellar west beers have featured, its cheerio cereal dusty and oddly medicinal, probably some weirdness settled out toward the bottom of the keg, not quite as tidy as i wanted this to taste and finish, but i like the beer a lot still. light and new oak, fresh pilsener malt at the base, a huge frothing white head on it and awesome carbonation. subtle honey, citrus, and honeysuckle, along with white tea notes and a crackery grain complexion with the lager yeast all over it. the yeasts seem about equal which is cool and the maturity is high, some minerals, noble hops, and crispness to finish, before the less flattering funk elements of the brett come out. i want this to be everything it is, but a little brighter and less invasive on the brett, which im sure it is in the bottle, if they in fact bottled this one. the beers coming out of here are awesome, inspired and well executed. this isnt their best in my experience, but it likey will be one of them in the future. hoping to revisit this one soon! not enough wild lager like this out there in the world...
