L: bright, deep dark brown under a lacy 2.5" tan cap with good retention.
S: a mild aroma of chocolate, mild roast - nothing harsh or burnt, nuts and dark malt.
T: Bitter sweet bakers chocolate dominates the flavors, lightly sweetened by dark malt sugars, seasoned by some background roast flavors, a trace of cinnamon and a little dark fruit
F: very creamy with a medium full body and medium low carbonation
O This is a very rich, chocolate beer

a well made base beer but i am not in love with how the chocolate has been integrated. there isnt enough of it in some ways, and there is too much of it in other ways. i get a lot of earthy bitterness, which i like, but the beer isnt quite substantial enough to support all that i dont reckon, and then there isnt much sweetness or actual chocolate flavor, which there seems to be a hole left in the beer for this to fill and it never comes, so it seems to be missing something, despite being impacted quite a bit by the chocolate, if that makes sense. the base stout is fine, basic, with some nice roasted bitterness and a little sweetness in the center moving towards the finish, but its understated and seems prime for a more compelling chocolate profile. i understand from the crew behind the bar that this will change a little batch to batch, and is still a work in progress. i am looking forward to seeing how it evolves, as it has a lot of promise and i love the idea of using the local chocolatier as a supplier. ill go back for this one next time i am in saint paul and report back...

Pours dark black with dark mocha head and streaking lacing thru out. Smell is mellow roasted malts with a dark/milk chocolate smell Taste has very nice chocolate its rich and decadent but at the same time milky and mellow it mixes well with the mellow roasted malts. Mouth feel is sweet and full without being to thick to enjoy the whole pour. Super chocolate stout here, a 10 oz serving is perfect.
