Undated bottle. Stored at 42 degrees prior to consumption and served at 45 degrees in a hand-washed and hand-dried Jester King snifter.
Appearance – 4.
Body – Dark yellow, hazy. Bottom sediment.
Head – Large (Maximum 6.2 cm, controlled center pour), off-white, high density, good retention, diminishing to a three to four mm ring and a complete rocky layer.
Lacing – None.
First pour – Yellow, slight haze.
Aroma – 4.25 – Guava, guava, guava! Fades somewhat upon standing.
Flavor – 4.25 - Wow! Begins sour enough to make me pucker but the second swallow seems less tart. Most of the guava flavor is transient but the malt background is obvious. Lactic acid predominates, and a hint of yeastiness is evident. No alcohol, no diacetyl, no dimethylsulfide.
Palate – 4 - Medium, almost creamy, lively carbonation.
Impression and summation – 4.25 – An excellent American Wild Ale. The guava aroma and flavor remain to varying extents in the finished beer, not too surprising since the recipe on the label tells us a lot of guava was added just before bottling. This beer looks, smells, tastes, and feels good, and the price point is not unreasonable.

Served in a flute glass from the bottle.
Appearance: Cloudy Amber color with a light yellow tint with medium to heavy bubbles on the body creating a white head rising half a finger's length off the body leaving almost no lacing at all.
Smell: This is a tough one for me but you smell heavy tart and lemon. Fruity scent which actually has a sweet feel but the yeast and lemon juice but not appease many crowds.
Taste: Sour right off the bat, yeast and guava which the guava alone does make up for the beer in other parts. Sweet and citrussy, light malts and over powering sourness which to me as an acquired taste.
Mouth: Sticky brew which is a bit dry, and slightly chewy. Medium carbonation and full bodied.
Overall: If you do not like sour ales leave it alone. If that's your thing or you don't mind throwing something different to the palate like I do I say grab it. Always in glass, Salud.
