Conshohocken Brewing Co. - Bridgeport Brewpub "Raise The Cat Saison"

Notes: "Raise the Cat is a straightforward traditional take on the style. Brewed with a simple Malt Bill of Pilsner and Crystal Wheat Malts and very little in the way of hops, allowing for a pure expression of the French Saison Yeast. This presents itself as moderately peppery with notes of pepper, citrus and other spices along with a pleasant mouthfeel. 7.1% ABV". Mostly clear deep amber/copper colored body beneath an off-white head. Average head retention and lacing. The aroma clearly delivers lightly caramelish malt with a hint of spiciness. The flavor follows with sweetish caramelish malt that's a bit more than usually found in American versions but quite common in authentic Belgian examples. Additionally there's a richness to the grain that's both unique and interesting. It's very much a farmhouse-style ale in my mind, at least in part due to that. It's spicy, with some fruitiness (juicy apple, soft citrus), but not too much - it's far from overdone. It's not aggressive and peppery as some Saisons can be, which is nice as it's much smoother and more drinkable. A firm bitterness leads to a dry finish with just a drop of malt sweetness that fades quickly but still leaves some grain flavor behind along with some spiciness. Well worth trying.
