Pockets of Sunlight is a saison brewed with honey, coriander & lemon verbena. Fermented with a mixed culture of classic saison strains, wild yeast, & bacteria. Post fermentation, the beer was conditioned in stainless steel for 6 weeks with its primary mixed culture. A third & final fermentation completed this beer in the bottle. Pockets of Sunlight is a radiant saison full of crisp energy.

Good beer. I reviewed it Friday, but it was not retained for some reason. I recall some sour and funk. Lemon stood out. Eight years in the cellar sure didn't hurt it.

L:. Pours a hazy straw orange yellow with a medium white head and no lacing.
S:. Lemon peel, peach, notes of orange and other citrus, notes of herb, sweet honey, notes of fresh bread, some nice Brett funk, lots going on but it smells very inviting.
T:. Lemon, citrus, orange, peach, coriander and herbs, some sweet honey, a medium sourness and some Brett funk, with notes of toasted bread. Complex and tasty.
F:. Sour that lingers on the tongue, medium body and higher carbonation.
O:. This is a very nice complex sour.

T:. Lemon, citrus, orange, peach, coriander and herbs, some sweet honey, a medium sourness and some Brett funk, with notes of toasted bread. Complex and tasty.
F:. Sour that lingers on the tongue, medium body and higher carbonation.
O:. This is a very nice complex sour.

Pours pale yellow, very hazy. small white head which fades quickly, almost no lacing
Nose: citrus and more citrus. like lemon peel, lemon juice, lemon extract. Grapefruit peel. Some funk and yeast.
Taste: very sour entry with just lemonade and squeezed limejuice.
finish: sourness turns to herbal, botanical earthy components as the beer warms up in the glass.
An interesting drink, and a good breezy summer beer i would imagine.

Poured into a teku. Slight head that quickly disappeared. Pale straw colored. Aroma is slightly sweet with some funk. Some spice. Taste is tart, with the honey and verbena coming through. Some funk, but not overwhelming. Well carbonated that stays on the tongue. Overall a delicious beer that I would love to buy again

Poured into a Barrelworks snifter. Slightly honey-tinged pallid yellow. No head other than a thin ring around the glass and little islands of bubbles. Smell of white wine. Crisp sourness, slightly sweet funk, flashes of herbs from the verbena, coriander in the background. Medium mouth feel, light carbonation, perfect for this ale.
I would buy this again.

A perfectly light, bright and crisp saison, well balanced with the coriander and honey providing great accents to the lemon and bacterial souring. Also digging the particular yeast culture used.

Moderate pour yields a 1/4 inch white head over a bright, golden body with no lacing and head is gone in a few minutes. Nose of herb, slight spice, and even slighter funk. Taste is very, very nice with all the parts coming together. Coriander, honey, and spice are present with a very nice tart finish from the lemon verbena . Coriander is noted on the finish as well. Feel for a Saison is a bit thin, but for an American Wild Ale, pretty good. Cheers to Athens, Ohio for this!

**UPDATE** - drank a two year aged bottled and it has begun to fall off significantly. Not to suggest it was at all bad or undrinkable. Rather, if ya have it, I'd urge you to drink it soon.
Would I buy this again? ABSOLUTELY. One of my most favorite beers.

L: Poured from a bottle to a snifter glass. Had a yellow color and a cloudy consistency. There was an inch of foamy, fairly long lasting head. Pretty good lacing.
S: A sweet, enticing aroma of Belgian yeast, citrus, malt, honey, and a slightly funky quality.
T: Tasted of a bit of the typical saison barnyard funk (not as much as with some Belgian saisons), lots of yeast, some honey, spices (pepper), a bit of citrus (lemon), and light malt. A much sweeter, lighter version of a saison flavor, but one that works. The honey and citrus fit right in with the style.
F: A well-carbonated beer with a lively, prickly finish. Medium-bodied.
O: An extremely drinkable, well made saison. It's not quite in line with the classic idea of the style, but it's definitely drinkable.
