MXD FRM is our house saison fermented with classic saison yeasts, many strains of wild yeasts, and a number of different beer-souring bacterias. Once the sugar rich wort is cast from the brew house, this melting pot of fermentive characters get to work for 2 months. The stainless steel-fermented mixed-fermentation saison is bottle and keg conditioned with the same mixed culture used in primary fermentation. A lightly tart, dry, and soft saison style ale, a little slice of fermented grace.

A 2” fluffy white cloud briefly hovers over the golden straw beer. The cloud evaporates within a minute of pouring, leaving the beer to glow while fine bubbles lineup in columns. There is no lace on the wall of a Pretentious Glass Co. Pub Tulip glass, and the clarity become translucent once the chill haze passes.

At first sniff, one is greeted with strong tart lime, followed by coriander. Surprisingly bay brine takes some time to be revealed. Hay becomes obvious after several minutes and faint skunkiness comes across with moderate warmth.

This one is highly acidic, with tartness and bitterness all competing for prominence. Lime is first to come into focus and is as strong as suggested by the nose. Skunkiness comes in second while tart grape skins build and make the beer very dry. The finish is long yet mild.

The texture is similar to taffeta, hard and course. A medium body allows the carbonation to seem fizzier than it realistic. Alcohol is more present than expected form 5.5%.

Once I added the second half of the bottle, allowing the yeast to flow, it added expected milkiness and unexpected strong lemon. The coriander was also elevated. This definitely improved my impression of the aroma and flavor.

Light golden color, perfectly clear body. Good head production for the style, and OK retention. Some yeast sediment in the bottle, but nothing unattractive.

Nice blend on the nose of sour, funky, and fruity notes, along with bubblegum-like Belgian yeast notes. Lemon, vinegar, hay, must.

Immediately funky up front, with an earthy and cheesy pungency. Only mildly sour, although that builds slightly mid-palate. Delicate sweetness on the back half, mingling with a lingering sourness through the finish. Notes of lemon, pear, leather, white grapes, pepper, earth, umami, lemongrass, hay, honey.

Lively and fizzy on the palate. Lively bite; refreshing. Very minor pucker.

A fantastic mixed culture rustic Saison.

Delightful little beer. Leans sour but not so far as to be difficult to drink. Lemony and peppery. Very easy and drinkable. A little expensive in Brooklyn but was worth it.

16.9 ounce bottle, 2018 vintage. Served in a teku, the beer pours a slightly hazy gold color with about an inch white head. Head retention is decent, and there's a small amount of lacing. I like the aroma, the brew smells like citrus (mainly lemon), grainy malt, green grapes, and some earthiness. It tastes like lemon, lemon peel, bready/grainy malt, earthiness, green grapes/grape skins, grassiness and a bit of stone fruit. Good amount of tartness. Mouthfeel/body is light/medium, it's smooth and easy to drink with a moderate amount of carbonation. I liked this, certainly worth a try especially if you like tart/sour brews. $7.99 a bottle.
