Polycephaly is the rare condition of having two heads. In partnership with Winking Lizard we present two distinct blends. Polycephaly 4 is a blend of Elle, wine barrel-aged Saison, and wine barrel-aged citrus Saison with orange, lemon, and grapefruit.

Pours a light yellow from the 375 mL bottle, audibly fizzing with quick dissipation. Slightly cloudy. Very bright and crisp acidity, with green apple, grapefruit, carambola, dandelion, and light yeast and funk on the nose. Good oak character on the palate, grape tannins and lemon.

Clear golden with a shimmering sheen, this only barely clouds up after the full pour. A minimal white fizz disperses fairly quickly to a slick surface with only a thin white ring.
Poly IV is another excellent entry in this series with Winking Lizard that shows great deference for the old world, bringing pungent, almost skunky hops and a sharp but pleasant funk. This has notes of tangy white wine and bright oak delivered via a sharp carbonation that fades into a semi-dry sting.
Infinitely drinkable and well balanced, this reminds me of a potentially more complex version of their streams series, with green apple, white grape and an overall enjoyable presence of malic-seeming acid.
