Inspired by the thoughtful cellaring of fine wine, this Vienna-style Saison was aged in oak barrels for 28 months and refermented on whole blackberries. Ouillage, a name borrowed from French winemakers, alludes to the headspace left inside a barrel after evaporation. This concentration of flavor leaves behind a satuarted tannic structure and a smooth, oaky finish. A testament to having the right headspace, from beer to brewer to cellarman, enjoy Ouillage with an open mind.

A- pours a ruby purple with a one finger foamy white head that reduces to leave nothing behind
S- smells of jammy blackberries, sharp oak, lemon, red wine and some acidic tartness
T- vinous red wine notes up front, followed by a muscadine-like note. Mid-palate brings out some lemon and acidic tartness. The finish gives jammy blackberry, red wine and oak
M- medium body with low carbonation leads to a foamy mouthfeel and tart finish

Muddled dark mauve with a short pastel pink foam that quickly fizzles out to an absolutely fluid surface.
Super herbal, uber wild blackberry explodes all over this barrel aged saison, where the barrel adds a welcomed, formidable presence of dark red wine oak. It's just a hair too sour, though, which is amplified by the medium-light body's sharp crispness.
