Scout members-only bottle #6 of 2021
Inspired by German roasted candied pecans, this blend of Bourbon barrel aged Imperial Stouts was boisterously treated with a trio of adjuncts to deliver the experience of snacking on warm, sticky pecans from a wax paper cone at the farmers market. Freshly roasted pecans, Indonesian cinnamon sticks, and Malagasy vanilla beans work alongside notes of toffee and rich cacao from the base beer to evoke memories of one of our favorite childhood treats.

2021 vintage; consumed on 2/10/22
Pours a sharp, motor-oil black body capped with a brief finger of dark khaki foam quickly fading to a blank void of cap, moderate, creamy collar, and no lacing holding to the walls of the glass.
Aroma wafts immediate notes of vanilla granola mix and underlying chocolate chips before bourbon imbues a deeper, boozier vanilla layer along with prickly barrel and softer caramel in sync with subtle cinnamon undertones through the middle; a now-charry vanilla frosting sensation develops into the back end of the bouquet as lingering candied pecans ease past the close.
Taste opens to burnt sugar and oaky bourbon finding rounded, detailed cocoa notes fusing to a cinnamon depth over the mid-palate; subtle caramel deepens to evolving and boozy bourbon vanillins, while candied pecans are balance by underlying malt roast into the finish.
Mouthfeel brings a medium body with minimal carbonation, slick and delicately syrupy in texture as a tingly spritz of charry barrel grit coasts over the mid-palate to a moderate-mild warmth fusing to a drying back end and glossy, smooth finish.
A quality, barrel-aged base, adjuncted to sweetness with definition and direction, while maintaining a foundational roast and amplifying malt-imbued cocoa across the profile; a keen sense of balance in what becomes only partially pastry stout form.
