Acetic sting, an off-flavor to us, an acquired taste for others. Such as with this blend of 1,2 & 3 yr old lambic now, in the past, some champagne bottles would be given the name "Gout American" ("American Taste") when they were typified by a high amount of volatile acidity. With this in mind, we developed this limited edition both high in acidity while maintaining a delicate balance that is both complex and fruity. Pair this special blend with sharp cheeses or simply as an aperitif.

Copenhagen 7/3 2022. 37,5 cl corked bottle from Meny, Borups Allé, Frb. F. Happy people emptying bottles while losing all their teeth on the pink label.

Pours unclear golden yellow with a mid-sized white head. A bit bubbly. Settles as thin but unbroken layer of foam covering the surface of the beer. No lacing.

Aroma is intense and sharply sour lightened by a light sweet fruity scent. Unripe gooseberries, sour green apples and vinegar. Light whiff of elusive strawberries.

Medium strong carbonation. Thin, oily, lively and tingling texture.

Flavor is medium intense with a light sweetness soon overpowered by a strong sourness. Aftertaste is sour and a bit watery. Lingers for a bit. Finish is dry.

Eminent, dry and unforgiving. A bit thin in the aftertaste.

Bottle. White head. Lots of active carbonation. Clear golden color.

Not as acidic as I was expecting, but still up there. Definitely tastes like boon. Dry, spritzy. Lemon citrus. Wet oak. A bit of dusty books. Orange peel.

Way too much carb here. Has a champagne like feel. It’s fine, but nothing I’d buy again.

Served in a Boon tumbler at 55°.
Bright orange with sharp clarity and racing champagne streamers. Billowing head of foam that lasts for the first few sips, and leaves behind some partial irregular lacing around one side of the rim.

Fruity and acidic aroma, pear, lychee, crabapple, lemon, oak, a touch of sulfur and briny barrel funk.

Moderately acidic, certainly more acid present than Boon Geuze blends in general, but not warhead sour like the more extreme AWA’s out there. Crisp lactic acid, citric acid, certainly nothing overly acetic or like vinegar in any way.

Lemony, acidic crabapple, a splash of grapefruit, oak and honeyed malt lend structure, Boon’s signature champagne-like carbonation. The spritzy bubbles scrub the palate, keeping things light and easy drinking. A little more citric fruit and acid than Black Label, but similar. Overall this is a nice blend, pairs well with gouda and apricot jam.

Bottle: Poured a clear golden color lambic with a large foamy head with OK retention and some light lacing. Aroma of funky ester with some barnyard notes with some tart notes and some discreet acidic notes. Taste is also a mix of funky ester with barnyard notes with some sour notes, light oak with some balanced acidic notes. Body is pretty full for style with good carbonation. Greta lambic with just enough acidity to retain good drinkability.

Beautiful light orange color, decent head. Dusty and musty aroma, This is not super sour despite the backstory. Lemony, sour, actually quite a solid geuze, goes down super fast.

A 750ml corked and caged bottle with a best before date of 19th February 2039. Poured into a Boon stemmed glass.

Appearance: A mostly clear golden colour with a two finger white head that had dissipated quite quickly while leaving only sparse lacing.

Aroma: Funky, barnyard, oak, straw, grass, with hints of apple, lemon peel and apricot.

Taste: Moderate sweetness and acidity, white wine, grapes, oak, straw, lemon, with hints of funk and a touch of sourness on the finish.

Mouthfeel: Dry, medium bodied with moderate carbonation.

Overall: It was sweeter and less funkier in taste than I expected, but still refreshingly enjoyable with nice fruity notes of grape and lemon.
