generously shared by drlovemd87, an absurd bottle of beer, done with mikkeller, one of my all time favorites, and this is easily my favorite of their blends to date, done in champagne vessels, the character and spirit of the bubbly is fully in tact, just astoundingly cool in such flavorful and mature lambic, blended here from one and three years, light and effervescent, infinitely funky and just piquant not real acidic, the quality here is through the roof and this was celebrator and special and fancy and worth whatever he heck he paid for it! among my favorite from a stupidly beery get together. a little rusty orange tint to this liquid but pretty clear for what it is, and a high and lasting airy white belgian looking head, lots of rising bubbles, looks great in the glass. it smells even better, max oak and funk, earthy and citrusy at the same time, the white wine is majorly evident, even from a yeast standpoint, and this seems even more woody than some of their other lambics to me, dried too. i get herbal spiciness in the flavor, delicate white grape and white peach, tons of mature bretty funk, clean wheat at the base, and notes of minerals and alcohol late, its almost like champagne and lambic blended together, not quite perfumey but its intense like that, light green pear with the rising acidity at the end. amazing depth of flavor here, cool showcase of the special wood, and obviously its good lambic to start with. a really special bottle, very thankful for the opportunity to have it, i hope to drink more of this in the future!

Bright gold with racing champagne streamers, a full head of billowing foam that rises above the rim of the glass. Lasting head retention and a thin collar around the edges. Sharp clarity, very active carbonation sustained over time.
Musty wet wood aroma first, eventually some citric acidity from lemon and apples, and a hint of maltiness is there too.
Fruity apple, pear, crabapple, lemony sourness, appleseed lends a firm bitterness.
Frothy and effervescent with a lingering tannic bitterness that must be unique to the foeders that were selected. Medium bodied with a creamy texture, moderate acidity, very dry finish with a noticeable minerality. Quite drinkable. The suggestion of champagne is perceptible, though not a big component. The blend is unique though it's not wildly different from Boon's other Gueuze blends. This one was fun to try, I wonder what number the foeders are, and if they might later appear in the VAT series.

Bottle: Poured a clear golden color lambic with a nice large pure white foamy head with light retention and minimal lacing. Aroma of nice funky ester with light green apple notes with some oak and vinous notes also perceptible. Taste is also a mix of funky ester with some light green apple notes and some oak and vinous notes with a dry finish. Body is about average for style with good carbonation. Nice complex lambic with good level of complexity thought not sure Champagne notes are that clearly noticeable.
