Pink Beds is a valley up the hill from brewery in Pisgah National Forest known for its beautiful wild flowers and mountain laurel. This wild sour ale was brewed with hibiscus and blood orange for a beautiful dark pink color and tart, refreshing taste. Fermented with Lachancea Thermotolerans Yeast developed at NC State University.

Picked up a single from the Appalachian Vintner in Asheville 8-4-22 for $2.47. No canning date; consumed 11-21-22.
Beer poured pink with a very nice off-white head.
Nose is vegetative and of berry fruit, kind of on the edge of rotting.
Taste is a malt base that thru the addition of mountain laurels comes across as vegetative. Oranges addition lends a sweetness that comes across as berry like. Finishes dry and balanced, like a rose wine.
Mouthfeel is light bodied and nearly perfectly refreshing.
Overall a very interesting beer to try. Nicely done but not sure i would have this again.

Aroma. Pleasant and fruity with just minimal funk.
The flavor follows, adding moderate tartness and a gentle bitterness.
Overall. Refreshing, limited acidity, and easy drinking for the style.

Paying homage to the terroir of place and the flavors that it holds, Ecusta Brewing goes to the flavors of Pink Beds for a modestly wild ale with blood orange and hibiscus influence in only a way that the wild flowers of Pisgah Forest can.
Bright mauve and soon swirling with a slight pink froth, the beer of the place's namesake, Pink Beds starts to glow immediately with a radiant citrusy scent with hints of berry, rose pedal and faint attic-like conditions in a delicate woodsy, musty tone. Any malt flavors start out with hints of taffy, lychee and pie crust with a quick palate introduction.
As the sour ale spreads across the tastebuds, its the fruit and herb additions that gain command of the middle palate along with the underlying brisk tartness of fermentae. The blood orange occupies a strong citrus contengency but the herbal flavors of hibiscus and the cidery, vinous and limey tone of sourness takes the blood orange in a cranberry, tart raspberry, green cherry direction. Moderately bitter in its late taste, the hops and fruit pectins align for a slight spicy bite that surprisingly highlights the hibiscus.
Medium light in body, its really the robust citrus character that has the beer seeming slightly fuller. With a finish of light burlap and weathered woods, the beer's fruit and field flavors are accompanied by a mild and yeasty brine as well.
