great beer here, a super estery and vibrant saison brewed with elderflowers, which are not subtle, way compatible with this yeast, and even though its the clean type of saison that i dont normally love, this is interesting enough to be in my wheelhouse anyway, but my goodness trying to imagine this with rustic old world yeast or even brett rather than a high tone familiar yeast profile, more clean belgian than farmhouse, but not a critique, just almost more like a belgian golden ale than a true saison. golden to brassy colored, pretty clear for the style, and it holds a high airy white head in the amazing glassware they serve it in at the brewery, gold rim and all. it seems like more than just wheat to me in this, soft feeling yeah but more of a toasted barley thing to it as well, nutty even for a second, pretty substantial for its golden color, a honey note, rich and sweet a little bit which usually i dont love in a saison but kind of fits when i think of this more as a belgian single or something, even a strong pale. herbal hops but also the flowers, both in aroma and flavor, which give it some real life and personality, delicate and herbal and springy, they love the sweetness all though this, a nice recipe choice, and there is some late bitterness to bring this back into balance. white sugar, rock candy, sauvignon blanc, trace acidity, white bread, light toffee, and a soft perfume thing from all the elderflower. gorgeous beer, hearty as these go, not overdone on the elderflower but very distinctive because of it, hot yeast but i dont mind, warms up nicely. super cool beer, maybe my favorite ive ever had from these guys, the elderflower makes it.
