We ❤️collaborations and this new barrel-aged beer — Winds of Boreas — is our 10.5% ABV collab with Axe and the Oak Distillery! We blended an imperial stout and our winter warmer and aged it for over a year in Axe and the Oak Whiskey barrels. This past Wednesday the guests at our dinner got to taste it in both its beer form and in a cocktail.

Good head production and decent retention.

Lovely, boozy nose, with notes of whiskey, oak, nuts, chocolate, prune, pepper, raisin, red grape, brown sugar, molasses, and leather. Leans RIS on the nose.

A touch lighter up front, for a moment, but this is a full-on imperial stout throughout most of the sip. Full bodied but not chewy, with a decent amount of alcohol heat; a bit of a throwback mouthfeel. Notes of raisin, prune, chocolate, coffee, red grape, toffee, caramel, pepper, dark bread, moderate char, leather; solid bitterness. Wonderful bourbon notes on the finish (whether or not Axe and the Oak qualifies as bourbon is irrelevant; that's certainly the flavor profile imparted).

This is an excellent blended beer. Enjoy it primarily as a BBA RIS, as that's its most straightforward presentation.

No change in the looks and smell categories as far as ratings or impressions. The flavor rating and impressions also remain the same. I give the mouthfeel a slight bump; it feels rich and well-rounded; very smooth and velvety on the palate. And compared to so many other barrel aged dark ales, this one just stands out every so slightly more from the rest, so another mild bump in that scoring area.

Ah, if only I had a third bottle to age another year and see how things develop. I'm impressed with the overall consistency is every area of rating (from my perspective). The subtlety and nuanced depth is what sets this one apart from so many other beers. A very nice mellow and subliminally potent dark ale.

Near black body, opaque; initially thick, spongy head, khaki colored, recedes a bit yet retains its density. Pleasant dark grain char mixed with dark chocolate, cocoa, and a trace of whiskey. Outstanding taste; earthy, chocolate sweetness; cocoa; moderate booziness; light to moderate bitterness. Heavy body; gentle warmth and softness on the palate; excellent residual sugar density.

The beer and the distillery are all Colorado Springs-based, so this is a nice local treat. This is a winter warmer and stout blend, barrel aged. The beer makes for a fine, cold weather beverage.
