6/1/26 - (Dovetail Brewery) (Chicago, Illinois) Draft Notes: 16.9 oz draft pour (0.5 liters) into a Willi glass at the Brewery for $8.75 plus tax. 6.0% ABV.
A four way collaboration from Chicago’s Established 2016 Breweries: Dovetail, Old Irving, Cruz Blanca and Hopewell. A “Modern” American Lager brewed with high-quality Sugar Creek Pilsner, a touch of Sugar Creek Vienna malt, corn grits, and lightly hopped with Saphir and Krush. Clean, crisp, and easy-drinking with subtle tropical hop notes. Can you guess what ingredient we brought to brew day?
Appearance: 0.5 liter pour into a willi beecher glass, yielding a crystal clear yellow golden base with minimal sustained carbonation, and a creamy white head that leaves thin lacing and cover over the entire base, build up around the rim. Looks great! 4.5
Aroma: Mostly “Modern” tropical fruit, pineapple and tangerine, at medium strength. Getting citrus and pine notes, but had to work hard at it. Enjoying what I’m getting. 3.75
Taste: Consistent with the aroma, more mellow tropical fruit than the aroma yields, pineapple, tangerine, citrus and grapefruit. 3.75
Mouthfeel: Faint gentle carbonation, light to medium plus body, flavors sweet, but balance with hops fighting well. Drinks slightly above the ABV, tropical fruit from start to finish. 4.25
Overall: Nice collaboration, modern but niche with the modern hops leading, but not obliterating, a traditional lager experience. Like the balance and effort by these four breweries. 4.0
