Some day it's all going to be downhill as far as luck goes, but apparently not just yet. This 2018 bottle was enjoyed from a lambic basket at Grote Dorst in Lennik. It poured classic yellow-orange and lightly hazy with a short off-white head that fizzled out to a sparsely bubbly, flat collar fairly quickly.
The wine barrel here is very present in both grape character along with some strong tannin in the drying swallow. Chardonnay and grigio qualities meet tart plum via a firm line of soft carbonation. A hint of cedar forest emerges as it warms.
This is more of the white wine influence we were looking for out of the white grape Cantillons we drank a couple days ago, but without added grape! Still, its acidity increases over time to be a little stronger than I'd prefer.
