Offsetting the natural spice forward flavor with citrus, the brewers at Mirror Twin brings the Belgian-style farmhouse ale into balance with gentle additions of grapefruit for a tangy, zesty, and fruity taste to offset pepper, must and grain.
Forbidden Fruit "twins" things up for the brewers as the ale rolls onto the tongue with grain sweetness and an aromatic display of citrus, grass, pepper and earth. Its hazy gold body crowns with a light and fast dissolving trickle of foam with breaming effervescent below.
As a bread sweetness of sourdough and raw barley subsides, the natural esters of pear, lemon, apple and orange are met with white grapefruit for an added layer of complexity that's equal in intensity as those naturally occurring fruit impressions. A fast followup of peppercorn, paradise seed, coriander and cumin provide a bright and spicy offset to fruit that carries its own earthen spice curry mix, A hint of white wine trends tart while the hops counter with grassy and peppery bitterness to close.
Medium bodied, the beer's bright effervescence seems of sparkling white wine at first but quickly goes creamy and even light and thin in finish. Leaving a grain derived tact on the tongue, the beer's pepper, bitter and mild tart taste carries a hint of parsley and mint in aftertaste.
