This is a fantastic IPA that utilizes the fruity and citrus wonder of mosaic hops. Although, generally hard to get, we made sure we got our hands on these hops to make this beer. While it comes in at 74 IBUs, the bitterness is not overwhelming. Flavors of stone fruit and citrus shine through, balanced by small amounts of caramel malt. This is the perfect IPA for Hop Heads and those trying to get a taste for this beer style.

On tap at the brewery.
Chill hazed gold with a normal white head.
Pungent, recognizably Mosaic nose. Juicy, blueberry, cotton candy.
Similar flavors with moderate bitterness. Still juicy and lightly sweet.
Medium-light body and carbonation. It doesn’t quite have the slick fullness a lot of juicy IPAs like this do.
The aroma is great and I’ve always been a fan of Mosaic.

Taster at brewery. Medium golden, sparse head. Hoppy aroma, resiny, pine. Taste reflects all of Mosaic's character. Nice showcase for this hop variety.

Pours a golden amber with a cream colored head that leaves some nice lace.
Citrus, floral, and biscuit malt in the nose.

The best ‘natural’ ipa sold at Mirror Twin, at least at the time of tasting. Good hoppy nose and flavor. Piny with bitterness that follows and gives you all the great ‘feels’.

I am trying this at the brewery. It poured a clear orangish with white head that is leaving a nice lace. The scent had faint hints of citrus peel. The taste was nicely balanced and easy to drink with citrus peel presence. The mouthfeel is lighter in body with good carbonation. Overall its a fantastic sessionable beer.

Bouncing off of their Citranomical IPA, Mos Def takes on the same base style of IPA but employs the exclusive use of Mosaic for a rounded hop flavor of tropical fruit, herb and stone fruits.
Mos Def pours with a medium amber, bold golden glow. Its moderate haze and short froth wafts over the nose with the promise of pitted fruit, grasses, citrus and exotic fruit blends. Caramel, lightly toasted grain and faint caramel all carry a the likeness of granola, at least at first.
As the ale develops, its hops gain a further grip on the tastebuds as the malt sweetness begins to trail off. Drying and tightening its malt flavor, the hops shed the taste of pink grapefruit and pineapple along with a tangy under ripe orange flavor. The tanginess of passionfruit follows, en route to a grassy and herbal finish of geranium and herb to round out the hoppy session.
Medium bodied, the beer holds onto enough malt body and sweetness to support the hops and to retain a mild balance against the bitterness. But a long linger of spicy and dryly resinous hops keeps the aftertaste botanical and herbaceous.
