When it comes to the new "New England" style of IPA, the techniques used are to bring out what's best about all hop varieties. What the keen brewers of Mirror Twin have noticed is that the style gets more out of old hop varieties as well as newer ones. So while the hop heads patter about the newest and sexiest hops, the brewery says, "Don't haze me Bro."
And the beer of the same name comes with a hazy golden amber color that's not all that dissimilar to beaten raw eggs and with a frothy meringue just to tease the eye. Radiant aromas of citrus, tropical and botanical herbs decorate the nose while the sweetness settles on the early palate with honeysuckle, light caramel and light pastry dough.
The beer's highly fragrant hops translate to a branch ripe, succulent and nearly tangy approach of tangerine, pineapple, peach, pink grapefruit and cantaloup. As the sweetness begins to relax, the tantalizing hop flavors develop into a smooth and herbal bitterness of freshly shaven spruce, juniper and a light fresh grassiness.
Lessoning its sweet grip, the drying and somewhat tart taste of orange sherbet, lemon verbena and chive play on the finish while the medium bodied beer captures a clean, crisp and refreshing essence, done on on the backs of Amarillo and Citra hops. But, hey! Don't haz'em bro!
