Showing that they are much more than just hazy, the brewers at Mirror Twin set their sights on a different kind of hoppy beer; one that takes a sip on the wild side.

With the help of the wild yeast, brettanomyces, Son of the Mustard Tiger comes to the bar sediment rich and full of probiotics. Floating through a medium of ruddy brown, the beer greets the rim with a foam of ivory and cream. A sweaty must meets citrus, tropical and stewed orchard fruit in an estery and spicy interplay on the nose. Mild sweetness creeps onto the tongue with a steely caramel, toasty, woody grain character and a creamy upfront texture.

As the flavors develop, the wild IPA begins to shed its sweetness and creaminess while the fruit flavors gradually take command of the middle palate. Pineapple, peach, pink grapefruit and lime shed a light on both the hop flavors and the tropical whimsy of wild fermentation. As the ale dries deep into the session, not only does the bitterness of citrus peel, spruce and grassiness come into play but so does the tease of acidity, peppery yeast spice and a woodsy must from that same yeast treatment.

Lemongrass, hay and a subtle hint of saddle leather roll onto the after palate as the beer carries a medium long aftertaste into a bitter and spicy interplay with weathered oak, damp burlap and an overall mushroomy character offering nuances of curiosity and interest along the way.
