In full celebration of the Topaz hops, the brewers of Mirror Twin and and Rock House team up for a full, fruity and lightly resinous pale ale that hits the summer head on.
Light burnish orange and with a goldenrod haze, Don't Paz Me By crowns with a loose froth and brings an aromatic drift of tropical fruit, stone fruit, berries, grassiness and light pine. Gentle sweetness rolls onto the early palate with a moderate honey and light caramelized taste.
Slightly nutty and with a brisk toasty character, the malts soon subside and the Topaz hops hits its stride. Dried pineapple, cantaloup and dried apricot bring an intensified fruit taste with a peppery twinge of blackcurrant after that. A mild resinous bitterness coats the late palate and ensures a spicy, grassy and light sappy final frame.
Medium bodied but trending dry, the fruit lessens and the spicy edges of grassiness, spruciness and pepper ensure a crisp, refreshing a dry finish, seeming slightly IPA-like. This is a great showcase of Topaz hops in all its resinous, tropical, and slightly dank character. You wouldn't want this one to pass you by.
