In a world where everything has gone juicy... gone hazy... gone richer. A new beer is born. As backlash to the trend of all-things-hazy a drier, crisper and highly refreshing beer pulls from the crowd on the heels of Mosaic hops and in imperial form. Mirror Twin takes their Mos Def IPA to a place where the IPA has never been before.
Pale amber and seemingly golden about the margins, Imagine Mos Def Being Too Dry pours with a racy, bubbly appearance caught between champagne and beer. As an arid froth forms, a quick collapse reveals an aromatic array of light caramel and honey along with dried tropical fruit, citrus and stemmy herbs. Scant sweetness is just enough to lay a nutty sweetness of peanut skins on the front of the tongue before a hint of honeysuckle and sweet tea floats effortlessly off of the palate.
With low malt structure for the hops to attach to, a taste of hop teas present a shell of fruitiness that hinge on green papaya, under ripened mango, dried pineapple, orange peel, pink grapefruit, lime and lemon zest. Quickly trending dry and bitter, a fresh stemminess of lemon verbena, fresh sassafras, lemongrass and hay decorates the late palte.
Dry, crisp and clean, the beer's void of maltiness is never able to elevate the hop flavor or aroma over that of a simple hop tea. A spice of sake adds a zip of booziness that is amplified without any malt sweetness or flavor to hide behind. A short aftertaste of herb, grass, peppery and hay is outlasted only by the dry resinous nature of pine cone.
