Toeing the line where pale ale ends and IPA begins, the brewers at Mirror Twin put the hop variety of Calypso exclusively to use in a New England styled, single hop pale ale for a full and juicy flavors that promise stone fruit, citrus and orchard fruit.
Pale gold, sepia and orange hues has the turbid Total Calypso My Heart sitting like grapefruit juice in the glass. Its radiant all purpose Calypso aromas entice the nose with melon and pear, apricot, lime and cider in a highly unique hop display. All that is woven into an initial taste of shortcake, caramel and honey as the malt sweetness takes an early lead.
Elements of tangerine, lime and white grapefruit tease the middle palate with citrus flavors while the juiciness of pear, honeydew and kiwi add a rounded taste. Apricot, nectarine and a suggestion of tropical mango lead into a spicy late palate of sun tea spice, lemon pepper and freshly carved sassafras.
Medium bodied and smooth throughout, the stronger pale ale carries medium bitterness into a malty dry finish with a linger of creaminess and moderate malt weight. This is one of the clearer displays of Calypso hops that's become available. Mirror Twin captures the essence of this hop extremely well.
