Double Dry Hopped, New England style, IPA. It almost doesn't matter which hops you use. Almost... With the success of their "Monster" series, Mirror Twin brewing steers into an old world hop taste upon a new hazy technique with the help of Simcoe hops.
Pastel golden amber in its shallow shades has the ale looking the part of creamed honey with a lather of ivory froth that begins to build. But the magic begins as Simcoe Monster fills the nose with a piney and citrusy bouque and a backdrop of citronella and cereal. As its rich malts begin to layer upon the tongue, its cereal, honey and shortbread sweetness acts as a buffer from the old-school hops.
But the hops billow on the middle palate as its citrusy tone unleashes a myriad of white grapefruit, bitter orange and lemon. Hints of pineapple and passionfruit make their way into the spicy and unexpected fruit tones while the beer trends resinous, bitter, herbal and pleasantly biting with a fresh grassiness, hemp, lemongrass and sassafras.
Medium bodied and siding with full, the cereal balance remains to give the grapefruit a creamsicle, sherbet and vanilla-like softness. A finish of lemongrass, lemon pepper and citrus peel trend medium long and piney on the after palate along with a racy bitterness.
