A watched pot never boils, well neither does a watched haze... We tried something new out just for you! We did not boil this in the brew process like we do with every other beer. Why did we do this you ask? You will notice a pillowy soft mouthfeel, a fruitier hop expression, and a haze that can not be mistaken from across the room. The waiting is always the hardest part. And waiting patiently on Mirror Twin's imperial hazy IPA that celebrates the best of Riwaka, Strata, Mosaic and Eclipse hops seems to take forever. Maybe we can sing a song about it.
Caught between golden, straw and pastel peach, A Watched Haze Never Boils kicks off with a creamy ivory froth and a host of tropical, citrus, stone fruit and pleasantly dank herb. Sweeter once on the palate, the flavors of cream candy, shortbread and honey bring a malty balance to start.
But shortly after come the hops and their cornucopia of fruit flavors represented with pink grapefruit, lime, lemon and orange from a citrusy blend before trending more tropical with pineapple, mango, passionfruit and kiwi. Not to be outdone, flavors of pawpaw, apricot and peach keep the cocktail of fruitiness flavor flowing before a medium balanced bitterness of spruce, fresh grassy herbs, green tea and sassafras.
Full bodied, creamy and smooth throughout, the stronger and fuller IPA shows a semi-dry finish due to hop resins and cuacao spice with a bitter-sweet aftertaste of fruit peel, dank herb and a hint of blackcurrant.
