Stage two of the evolution is upon us. Using portions of the liquid from stage one and the same wine barrels, this blend was two years in the making. After spending some months souring in our solera, this elixir was sent to french oak wine barrels for fifteen months. After maturing in the wine barrels, it was laid to rest for a few months on marionberries. What you are left with is a full flavor, complex funky sour.

Leg two of their wilder stride of beer making, Mirror Twin once again steps away from their smoothie sour ales and continues their evolution of souring; one that has taken on a wild life all its own. Aged in further aged in wine and french oak barrels with marion berry, the taste simply gets more mature.

Stage 2 of Eternal Evolution pours off with a lightly foggy lavender and mauve color, looking again, much like a fine plum wine after the few bubbles settle down. Teasing the nose with pickled berry aromas, its vinous scent tightens the jaws and wets the palate while a bead of sweat develops on the cheeks. Fruity and succulent with juiciness, the malt profile is thin and wafer-like with hints of wine rot and sourdough.

While the briskly acidic ale washes the middle palate, is erases all thirst and replaces it with fruitiness of grape, dark berry, plum and currant with a background of lime, lemon, crabapple, gooseberry and dried grapefruit. Peppery, spicy and with a dry earthy kick, the beer finishes dusty and earhten with suggestions of damp moss, burlap, saddle leather and a general cellar-like funk.

Crisp and drying in body but plump in marion berry flavor, the beer's robust juices flow through the finish en route to a winey aftertaste equipped with cork, sourness and bright berry.
