Funky, sour, winey and filled with fauna, the evolution of Mirror Twin's sour ales show that they are much more than smoothie, milkshake and cereal.
Aged in wine barrels with a mixed culture of fermetae, Eternal Evolution comes with a foggy dark wine shade of reisling. Scantly headed and teasing the nose with jaw tightening tartness, the scent of citrus, cider, vino, weathered oak and mossy funk, the aromas soon give way to a tantalizing dry sweetness of sour candy and sourdough. But its rise of lime, lemon, crabapple, grapefruit, white grape and vinigar-type of acidity is all wrapped in a veil of peach for a slightly juicy balance to the brazen sourness to finish.
Light, crisp and fully drying on the palate, the sour is near lambic-like with the funky peppery character of true American ale gone wild.
