Pours almost clear, dark amber, with swarms of carbonation racing to build a two-inch, tight, white head. The head lasts about a minute, leaving a single ring on a PBGC Pub tulip glass.
Fruity funkiness is reminiscent of Juicy Fruit gum combined with brittanomyces. Overripe orchard fruit like apples and apricots are prominent with honey being low key.
The beer is surprisingly dry start of finish, with sour and bitter being balanced. Light honey and toffee give way to undifferentiated spices. The long mild finish becomes dryer with length. Warmth amplifies a cinnamon/applesauce.
A soft, chewy full body with alcohol well below expectations. Fine carbonation is fizzy and far less significant than the appearance otherwise suggested.
This is an enjoyable beer that seems to be a hybrid of Saison and Braggot. It is earthy and more suited to conversation than reading or contemplation. I enjoyed it on a cold afternoon and found that it definitely improved with significant warmth upwards of 60 degrees.
