A triple-fermented, wine barrel-aged, mixed-culture peach saison. 14 months in the making, and worth the wait. Primary fermentation in stainless steel tanks, aged in French oak wine barrels for 12 months with Brett yeast. Once peach season rolled around, we added the best local peaches to the aged beer and moved the batch back into stainless steel tanks.
The ripe peach flavor is in the forefront, and it's balanced by earthy vanilla, leather, and oak from the barrels. Secondary fruit notes of pineapple, red apple, and strawberry. All of that, with a light, slightly tart finish, makes for a delicate and complex profile reminiscent of an aged white wine.

Murky brownish orange with no head save a bubble collar, not the most appealing pour. The french oak comes through nicely in the smell and taste. In the nose yes there are peaches, but also get weird amounts of melon, strawberry, and apple in the background, waves of brett with dry earth accents round out, very odd. Taste lacks balance and while the flavors are fine they don't make sense together as constructed: huge peach, sharp brett, and the issue: enhanced minerality, the cardinal sin of peach sours, lead. Odd tropical fruit and berry combo hit the big oak but in a way that clashes, almost salty with more brett in aftertaste. Feel is bretty and sour, while have good oak but the body is heavy for style and generally not the smoothest of sips. Was excited to try one from this brewery, but technical flaws hold it back as it tried too much for what the balance of delicate peach could handle
