For this variation on Fields of Rye, we took the Fields base wort, and primary fermented it in one of our foeders using our house mixed culture. We then refermented it on a healthy dose of Colorado-grown Bing cherries and some black currants Elissa picked from her favorite shrub in the Dale Ball system. We are geeked on getting some local currants into a beer we enjoy so dearly. This beer has a measured pH of 3.34 and a titratable acidity (TA) value of 9.6 g/L. Cheers!

Had on tap. Orange magenta body with a white collar. Smell captures the tart cherry and currant in a bath of rye, slight phenols, barnyard funk, grains, oak, and light brett. Great balance. This balance continues the in taste with the fruit, oak, and funk, but the underlying grains, phenols and base saison elements are muted, though there is a kiss of earth. Feel is tart and funky, finishes dry, overall medium bodied. Very nice wild saison for a sunny day in the desert
